This is one of my favorite winter recipes. Quinoa Chicken Chili.

Who doesn't love a hot bowl of chili on a cold winters day? The best part is, this is an easy crock pot recipe! This protein and flavor packed meal will give you a healthy dinner that everyone enjoys.

Here is what you need:

1 cup of quinoa, rinsed

1 (28 ounce) can of diced tomatoes

  • 1 (14 ounce) can diced tomatoes with green chilies
  • 1 (15 ounce) can of black beans, rinsed and drained
  • 1 (15 ounce) can of chick peas, rinsed and drained
  • 1 (15 ounce) can of chili beans, rinsed and drained
  • 2 cups low sodium chicken broth
  • 4 large boneless skinless chicken breasts
  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • 1/2 teaspoon red pepper flakes
  • 2-3 teaspoons chili powder
  • ** toppings of your choice are optional ,cheese, sour cream, avocados

Directions:

1.Place all ingredients in slow cooker (at least 6 quarts)

2. Cook 4-6 hours on high or 6-8 hours on low

3. Once chicken is cooked shred with a fork

4. Add favorite topping above

5. Sit and enjoy:)
